My New Obsession - Chocolate Coconut Balls
Since giving up processed sugar last winter (not for weight, but for the health of my skin) my sweet tooth has been in need of filling.

This recipe has been an amazing addition to my diet so I wanted to share!
INGREDIENTS:
1/2 cup - Coconut Oil
1/2 cup - Cacao Powder
1/4 cup - Maple Syrup
1 cup - Coconut Flakes, Unsweetened
1/4 cup - Large Old Fashioned Oat
(Rolled Quick or Steel Cut Oats might be less 'chewy' option if you prefer)
1/2 tsp - Pure Vanilla Extract
1/4 cup - Finely Chopped Raisins
DIRECTIONS:
1. In a medium pan, melt coconut oil on low heat
2. Remove from heat and whisk in cacao powder and vanilla extract. Next, whisk in Maple Syrup. Add coconut flakes and oats, stir well until well combined. Place mixture in a freezer for about 10min.
3. Line flat sheet or platter with parchment paper. Using a small scoop, form and roll golf ball sized (or smaller) chocolate coconut balls, placing on a platter. Freeze for another 30min.
Enjoy it chilled strait from the freezer!
(Lasts 3 months in freezer)
